Our Story
The Building
The Beaumont operated in Lincoln Park for over 40 years as a 4am bar where generations of Chicagoans made (or lost) memories in their early twenties. Opened in 1979, The Beaumont was a cornerstone for young people in the neighborhood for decades.
The building itself dates back to 1890. In 2024, we acquired the space and began an ambitious gut-rehab this past spring. Though bittersweet, this is not the return of the late-night, rowdy Beaumont but the restoration of an iconic Chicago building and the birth of a new neighborhood restaurant. To that end, we wanted to keep a name that is both historically tied to the building and etched into our city’s memory. We added the “s” because it’s the Chicago way.
The Concept
Beaumont’s is an old-school, tavern-driven American restaurant. As we hope to open a neighborhood institution that stands the test of time and pay homage to the building’s rich history, both the space and concept as a whole lean in to a bygone era.
The menu features American classics alongside French and Italian staples, from handmade pastas to charcoal fired steak frites. The beverage program is driven by classic cocktails while featuring predominantly American, French, and Italian wines, all while maintaining a warm and approachable atmosphere at an accessible price point.
During our interior demolition phase, it became clear that the second floor of the building that previously housed two apartments would make for an exceptionally cozy steakhouse: one with fireplaces and big tufted booths, a little bar and dim lighting — a tucked away nook above the bustle of Halsted. A second concept made sense to us… The Bull Moose was born.
The Bull Moose is a restaurant we’ve been imagining for as long as we can remember: an intimate Chicago steakhouse, stuck in the past. The name is borrowed from our Grandfather, who earned the nickname “The Bull Moose” through a long series of fortunate events. He was a Chicago guy - a man that stood a little taller, liked his steak rare, and drank his bourbon neat.
We look forward to welcoming you to Beaumont’s & The Bull Moose as soon as the dust settles. We anticipate opening in the spring of 2026.
